Food Allergens
The Food Allergen Labeling and Consumer Protection Act takes effect on
January 1, 2006. We can assist you by reviewing your existing allergen-control
program or by helping you to develop and implement a comprehensive allergen
control program. We start with product development and ingredient specifications
and work through scheduling, processing, change-over sanitation, and labeling.
We can provide allergen control training ranging from general allergen
awareness to job-specific training. Once the program is implemented, you’ll
have the tools needed to continually improve it.
Program development
We have developed food safety and food quality programs at both plant
and corporate levels. We know what regulators look for and we know how
to “tweak” programs and forms so they’re easier to use
and meet regulatory expectations.
Consultation
With 45 years of experience in the food industry, we can assist you in
finding solutions to your issues. Sometimes another set of eyes or a fresh
viewpoint helps to resolve a regulatory, sanitation or quality issue.
We take pride in streamlining finished product specifications to make them practical, science based, and efficient then translating them into language widely understood in manufacturing facilities.
Training
Employee understanding and ownership are keys to successful program implementation.
Our training programs are inactive and use workgroups to further engage
employees.
Dr. Jennifer Johnson is an International HACCP Alliance Approved Lead instructor for Introductory HACCP (see http://haccpalliance.org/alliance/accredtrainingprog.html). In most cases, the HACCP course can be customized to accommodate specific facility needs while still meeting Alliance requirements. An on-site course typically lasts two and half days, but the schedule can be customized to accommodate staffing concerns. Upon course completion, participants receive certificates bearing the International HACCP Alliance.
Examples of other training programs include: recall roles and responsibilities culminating with a mock recall; Listeria control; good manufacturing practices and standard operating procedures.
Auditing
We are American Society for Quality (ASQ) Certified Quality Auditors with
experience in auditing food safety and quality programs. We strongly believe
that audits should be used to continuously drive process improvements,
not to “police” the process. Audits can be performed at your
facility or we can audit your suppliers or co-packers using your audit
form or a customized form we develop jointly. We can even teach your staff
the tools and skills needed to perform internal audits
